Celery Salad Recipe

Salads are a great way to get the necessary nutrients and tickle the taste buds at the same time. Celery salad with almonds provides the crunch and flavor and uniqueness to cap off a late summer evening.

Ingredients:

1 cup Canola oil
1 tablespoon lemon juice
1 tablespoon vinegar
2 stalks celery
1/2 cup almonds, blanched and shredded
1 head lettuce
1/2 teaspoon salt
1/2 teaspoon Dijon mustard
1 tablespoon dried sweet basil
Red pepper, to taste

Directions:

Rinse and dry the lettuce leaves, place in long glass dish (9X13 or so). Then, put oil, mustard, salt, sweet basil, and red pepper in a bowl and mix well. Add the sugar, lemon juice, and vinegar a bit at a time. Whisk the mixture for a full five minutes. Dice celery and mix with almonds and the dressing mixture, use as a dressing for bed of lettuce. Serve with tongs.

Interesting Fact:

Celery was originally known as smallage. It had a very bitter flavor. But in the 1800s botanists bred the bitterness out of the plant making it more appetizing.
