Q: How do I keep from getting crystals in my ice cream? Try putting plastic wrap close to the surface of the ice cream when putting the uneaten portion back in the freezer, also avoid letting it melt at all when dishing it out. There are always ice crystals in ice cream. Nevertheless, the crystals are very small when it is made at the dairy. If it melts and refreezes the new ice crystals will often be large and irregular causing a gritty taste.
