Parsley Sauce

White sauces can turn a meal from humdrum to exquisite. The addition of parsley to the sauce enhances the flavor and adds color. Cream sauces can be heavy, but they are also delicious. Use this recipe judiciously, more than once a week and you might develop a habit!

Ingredients:

4 tablespoons butter
4 tablespoons flour
2 cups milk
2 tablespoons dried parsley
2 cloves garlic minced
dash pepper

Directions:

In a saucepan, melt butter over medium heat. Add flour and mix quickly with butter until all flour has been wetted. Remove pan from heat to do this process if necessary, you do not want to scorch the flour. Return to heat, add milk, and spices. Stir continually until sauce thickens. Remove from heat and serve hot over baked chicken breasts or vegetables.
