Baked Potato Wrapped with Bacon
This recipe will make eight potatoes for a hearty meal. Beef or chicken goes especially well with these potatoes, but turkey will also do. Prep time is only about 15 minutes, but an hour and a half in the oven will be required.
8 baking potatoes
1 dash pepper
8 slices bacon
Potatoes should be thoroughly washed. Remove eyes or sprouts. Tear off eight strips of aluminum foil wide enough to completely wrap a potato.
Wrap bacon slice around the middle of each potato. Sprinkle on pepper and place potato on foil. Pick up the four corners of the foil and bring them together in the middle, then twist so that the potato is snug in the foil but the seam is on top. This is done to keep the grease from the bacon from dripping into the oven and ultimately causing a grease fire.
Heat the potatoes in the oven at about
375° Fahrenheit (191° Celsius). One and a half hours should be sufficient to cook the potatoes. However, they may go somewhat longer if needed. Doneness can be tested by puncturing a potato with a fork take care to avoid releasing any grease in this case.
