Wild Rice Casserole

Wild rice is considered a delicacy. However, like many delicacies children may protest that plain white rice is better. Even so, this is a great stand alone meal, one that microwaves well the next day (or the day after).

2 oz. Butter
1 chopped onion
1 crushed garlic clove
1 1/2 lb cooked cubed chicken
8 oz. sliced mushrooms
1 teaspoon thyme
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon ketchup
8 oz 1 1/3 cups wild rice
16 oz. chicken stock
8 oz. Shredded cheddar cheese

Preheat the oven to 350° F. Start by melting butter in a pan. Add onion and garlic and stir. After about six minutes add all of the ingredients except for the cheddar cheese. Bring to a boil. Put contents of pan in a casserole dish and put it in the preheated oven. Let the casserole cook for about 25 minutes. Set oven to broil. Spinkle cheese on top of the casserole. Grill for about 5 minutes and voila! It's ready to eat!
