Recipe: Chive Dressing

This recipe is based on the classic vinegar and oil dressings. However, the mixture of spices gives it a nice bite and just the right tang. Be sure to use olive oil as it lends a bit of flavor of its own, plus it is reputed to be quite healthy.


1/3 cup red wine vinegar
1 cup olive oil
1/3 cup finely chopped fresh chives
2 cloves crushed garlic (or 1 tsp powdered)
1 teaspoon paprika
1 teaspoon pepper
pinch dried cilantro
salt to taste


Very simply, pour all ingredients into a jar shake vigorously and refrigerate. When cutting chives from the garden, be sure to weed out brown stems and avoid stems upon which flowers have formed (these can be tough). Fresh garlic is obviously better than powdered. A bit of fresh cilantro may be used, but cut it up very fine. I usually have so much cilantro from the garden that I end up drying it and crushing it almost to a powder. It smells quite wonderful every time you open the jar. Use dressing on all kinds of salad leaves. Keeps for extended periods in the refrigerator.
