Tabouli

This is a traditional Middle Eastern or Mediterranean recipe that is unlike most western dishes. It has an interesting flavor and texture. As it is served cold or at room temperature, it is a great dish for summertime luncheon or to take on a picnic. Of course, parsley is one of the main ingredients.

Ingredients:

2 cups bulgur wheat
2 cups hot water
2 cups fresh chopped parsley
5 diced scallions
1/3 cup fresh chopped mint
1/2 cup lemon juice
1/2 cup olive oil
1 teaspoon pepper
2 cloves minced garlic
dash of salt to taste

Directions:

Soak bulgur wheat in hot water until water is absorbed. This will take 30 to 45 minutes. If there is some excess water, drain it off. In medium sized salad bowl add all ingredients, periodically stirring to ensure an even mixture. Leave out the salt if there is a problem with high-blood pressure.

Try adding a diced peeled cucumber or tomato, or both. If so, you may wish to increase olive oil and pepper to ensure a thorough coating.
