Oven Fried Potatoes
This dish will make six or so servings, but likely feed only four. Use more or less potatoes depending on the number seated at the table. This goes great with burgers or hotdogs, chops, chicken, and steaks. Why not say - it goes with everything? This dish will take about 20 to 25 minutes to prepare unless the chef is quick with a paring knife.
Ingredients:
6 medium potatoes
Several dashes garlic powder
Sprinkling of black and red pepper
2 tablespoons parsley
1 tablespoon basil
Heavy sprinkling of paprika
2 or three tablespoons olive oil
Directions:
Scrub potatoes and remove any sprouts. Cut the taters into bite sized chunks. The more angular they are the more authentic they will look. Place them in a large baking dish. Pour olive oil over potatoes and toss until the potatoes are thoroughly coated. Sprinkle on spices in the order listed in the ingredients. This is done because you want the garlic to stick best. If the paprika comes off just before serving it is okay, it is mainly for show.
Place in
375° Fahrenheit (191° Celsius) oven for about an hour, sometimes longer depending on the size of the chunks of potato. Bake until the outside of the potatoes is crunchy and the inside is soft. Eat hot!
