Almond Fried Rice Recipe

This excellent dish can serve as a light meal in itself. However, it was designed to be a course in a bigger meal. This goes well with barbecue chicken, but is especially efficacious with pork shish kabob. The menu need not be completely oriental in flavor. It is nice with a light fruit cocktail for dessert.

Ingredients:
1 egg
3 cups cooked rice
2 oz diced and cooked ham
3/4 sliced green onions and tops
1/2 cup red bell pepper
1/2 cup blanched and toasted almonds
2 tablespoons soy sauce
2 tablespoons vegetable oil

Heat the vegetable oil in a frying pan over medium-high heat until you can sense the heat when holding your hand about 8 inches above the skillet. Stir in green onions and red bell pepper. Heat for one minute. Add the egg and stir. Now add rice. Combine ham and soy sauce into the mixture along with the almonds and heat through.
